the ideal paring knife - it's so thin and light. It hasn't been a bad day. The fabric is light without being too thin. This tool fits well in the hand. I tested it by peeling some very ripe peaches and it performed well with no ripping of the skin as it cut and no digging into the soft flesh of the fruit. I have found that it is an "invisible tool" during my usage of it - I haven't noticed it unless I'm looking for it. When you are cutting things, you just cut exactly how you want them, never thinking about how the knife will work Simply placing your hand or mind on it makes it an extension of yourself. Despite my hesitations about the price, I'm quite happy with the Wusthof ikon knives in the kitchen and will investigate some other Wusthof knives.

This is a Wustof Classic Icon. Carrots are cut like butter with a 5" paring knife. BUY ONLY WUSTOF I. DO NOT BUY ANY OTHER LEVELS. Whether it's "Gourmet" or just "Classic". THE 'ICON' LEVEL IS THE ONLY KNIFE THEY MAKE THAT IS A HIGH QUALITY FINE KNIFE. The cost was a bit high, but it was totally worth it.

There is too much brittleness in the blade (1/5)

This paring knife was a firm favorite as well. My wife accidentally dropped it on the tile floor when she bumped it on the counter. In two pieces, the blade of the knife broke off. There is a break in the handle about 1/2 inch from the end. I will charge you $70 for this service. There is nothing I can recommend about this knife. Ken Kramer, *br>.

The knife is great, but not the knife I wanted (5/5)

I wanted the paring knife with the spear tip, as shown Upon ordering (from Amazon), I received the "birds beak" style paring knife (the kept it as I had already planned to order one regardless. It took me longer to order than I expected, so I placed a second order. Once again, the blade is in the shape of a bird's beak. I believe Amazon's product images / descriptions are incorrect. *br>*br>No matter what, the birds beak paring knife deserves high praise in all the ways a basic paring knife should The blade is surprisingly sharp and heavy for such a solid tool, it feels great in the hand, and it is easy to maneuver.

Since I have always used black knives in the kitchen, I was skeptical about getting a white knife. It just seemed odd. This is so much better than I could have ever imagined, and I'm so glad I bought it. I have small hands, making it difficult to find knives that fit them. Initially, I was not sure I would keep this knife, or whether I would even like it (5/5)

But, I ended up keeping it. Although it wasn't as heavy as I thought it would be, for a paring knife, after I used it, and it cut through the fruit with such ease, I knew it would be an excellent choice. The document is something I'm glad I kept.

In culinary school, someone stole my Mercer paring knife, and it would cost more to replace that knife than to get this Wusthof instead. The blade is thin, and it glides through what you are In order to give you an idea about how sharp this knife is and how fine their blade is, they can shave with it, and then they can use it to zest a lemon without tearing the peel or getting any pith. I love how it feels ergonomic and fits perfectly into the palm of your hand no matter how you hold it. This handle type works equally well with a meat cutters grip, or granny grip, which should be equally as comfortable and controllable as the standard chef's grip. In case you're unsure whether to buy a wusthof or something cheaper, you might want to try the wusthof first! This is a great deal you won't regret.
