New York City’s Extra Fancy created the Ruby Queen recipe in collaboration with Rob Krueger. In addition to this one, the cocktail menu at the Brooklyn bar features drinks that are just as creative and patrons of the bar can never grow tired of its specialties. While it has a couple of unusual ingredients, the Ruby Queen is in fact quite simple to make.

For this recipe, you will need fresh beet juice and to make a fresh honey syrup, fresh beet juice and freshly dehydrated honey. You will be surprised when you experience how well whisky plays against such a sweetened vegetable profile. Most of us would most likely prefer a neutral spirit for a flavor like beets but the whiskey gives the drink a depth that vodka and gin do not.

  • 1 oz fresh red beet juice
  • 1 1/2 oz Scotch whisky
  • 3/4 oz honey syrup
  • 3/4 oz fresh lemon juice
  • fresh dill sprig or tarragon sprig (for garnish)
  • lemon twist (for garnish)

Steps to Make It

  • Add the Scotch whisky, beet juice, honey syrup, and lemon juice in a cocktail shaker. Fill it with ice.
  • Shake the mixture vigorously for at least 30 seconds.
  • Strain it into a chilled cocktail glass.
  • Use a sprig of fresh dill or tarragon and a lemon twist to garnish then serve. Enjoy.
