A frozen cocktail combining rum and Irish cream, the Irish encounter is an instant classic. I like it a lot, but its a little different from a pia colada. Banana is preferred to pineapple in this drink, and it’s infused with Baileys for a creamy touch (and the promised encounter). This recipe came to us from Pyrat Rum and their XO Reserve is a great choice to pair with it since it has some great citrus notes. A good amount of coconut milk and banana give it an excellent tropical fruit base, perfect for a hot summer day.

Recipe Variation

It is similar to the Pia Colada in that it can be shaken and serves as a very nice cocktail. Mix all the ingredients in a cocktail shaker, add the banana liqueur, and shake vigorously before straining out the ice.

  • 1/3 banana
  • 1/2 ounce aged rum
  • 1/2 ounce Irish cream liqueur
  • Whipped cream is used as an accompaniment.

Steps to Make It

  • Make sure the ingredients are ready.
  • Pour the ice, coconut milk, bananas, rum, and Irish cream into a blender and blend until smooth.
  • Stir for about 15 to 20 seconds until smooth.
  • Fill large margarita glasses with the cocktail and serve in a tall glass.
  • Serve the dessert garnished with coconut whipped cream.
  • It's time to serve and enjoy.
